Ingredients

  • 1 T-bone steak (about 350gms)
  • Salt
  • Freshly ground black pepper
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons unsalted butter
  • 3-4 garlic cloves, crushed
  • 2-3 sprigs of fresh thyme or rosemary

Instructions

  1. Preparation:
    • Remove the T-bone steak from the refrigerator and let it come to room temperature for about 30-45 minutes. This helps ensure even cooking.
  2. Seasoning:
    • Pat the steak dry with paper towels to remove any moisture.
    • Generously season both sides of the steak with kosher salt and freshly ground black pepper.
  3. Preheat the Pan:
    • Heat a large cast-iron skillet or heavy-bottomed pan over high heat until it is very hot. This will give the steak a nice sear.
  4. Cooking the Steak:
    • Add 2 tablespoons of olive oil or vegetable oil to the hot pan and swirl to coat the bottom.
    • Carefully place the T-bone steak in the pan. You should hear a loud sizzle.
    • Cook without moving for about 4-5 minutes to form a deep brown crust.
    • Flip the steak using tongs and cook the other side for another 4-5 minutes for medium-rare. Adjust the cooking time based on your preferred doneness:
      • Rare: 3-4 minutes per side
      • Medium Rare: 4-5 minutes per side
      • Medium: 5-6 minutes per side
      • Medium Well: 6-7 minutes per side
      • Well Done: 7-8 minutes per side
  5. Basting:
    • Reduce the heat to medium.
    • Add 2 tablespoons of unsalted butter, crushed garlic cloves, and fresh thyme or rosemary to the pan.
    • Tilt the pan slightly and use a spoon to baste the steak with the melted butter and garlic/herb mixture for about 1-2 minutes. This enhances the flavor and helps keep the steak juicy.
  6. Resting:
    • Remove the steak from the pan and transfer it to a cutting board.
    • Tent it loosely with aluminum foil and let it rest for 5-10 minutes. This allows the juices to redistribute throughout the steak.
  7. Serving:
    • Slice the steak against the grain and serve immediately. You can serve it with your favorite sides like roasted vegetables, mashed potatoes, or a fresh salad.

Tips: 

For Grill: If you prefer grilling, preheat your grill to high heat and follow the same seasoning steps. Grill the steak for about 4-5 minutes per side for medium-rare, adjusting the time based on your desired doneness.

Thermometer: Use a meat thermometer to check the internal temperature
